Not at rocket speed.

Not complete, either.  The dishes never were done.  I kept setting up a soak, only to forget, have the water run cold, and not be interested in doing dishes in cold water.  The last time I simply gave up, waited for the water to heat back up, then took a shower and went to town.  The bread store was open, thankfully.  Then on to the grocery store.  I bought most of what I needed, forgetting noodles.  I have pasta, it's just not the same as frozen thick egg noodles, or the like.  I didn't visit my friend as I am still pretty blocked up.  I'm not sneezing or draining so I don't think I am much of a threat to standard folk, or I really wouldn't have gone out.

I am just now considering putting my stock together.  I figure, after the meat is cooked, and the all, I can cook rice in some of the stock.  Whole rice will be a solid add to the chicken soup.  I may also add lentils, though I can add those right to the main mix while I stew mirepoix and meat.  I went with hindquarters, if I had to go with drummies and thighs.  I don't seem to be able to find full hind quarters these days.  No real worries.  And, I probably have enough of everything for two batches, or about six quarts.  I will, most likely, after pulling out enough for one batch of chicken soup, reduce the rest... say four quarts, down to about one or two quarts.  Then consider experimenting with freezing blocks of it, then bagging those perhaps.  You know, one of those ice cubes, and say four times strength, would be good to melt into a 2 or 3 part water to cube as a healthy bullion cube, for just a taste of chicken without too much fuss.

I best get on that.  Though I will be simmering for eight to twelve hours.  How long the reduction, and soup production, will take is another thing.  There are many recipes out there.  One thing some miss, that I am sure shouldn't be missed, is a spot of vinegar.  That, somehow, really pulls flavor from bones.  My mother... I think... back in the day... swore to that.  I didn't always get along, or agree.  I did learn, if nothing else though there was more, that regarding food my dam knew here whereabouts.  And, in time, some of it has come back... some of it stayed and some will need to be heard over and over.  This one is a memory from then, I believe.  Seen it elsewhere, but her bona fides pushed the notion over the edge.  Just a tablespoon or two per portion, if I had to guess.  Hmm... might be a good reason to call her.  She loves to be right, and remembered, and helpful.  Mostly.  :)
