Steak.

Baked, at 350, for fifteen minutes.  Just to... get it up to temp.  Then, five minutes on medium high, to high... flipped and the heat turned to a medium low for three minutes... in a thicker pan that holds the heat.  Pulled it, set it for five minutes, then started in.  Very good.  Not as absolutely rare as I like it, but for pan frying, this is as good as I can cook a steak.  The limit being that it is a a new york strip, and the fat on some of them (including partially on this one) is off.  I was able to cut the outside eighth of an inch off, and the fat under that was good.  I... love the fat, save on new york strips.  At least I didn't have to cut it all off.  Rancid, or something.

I ate half of it.  The rest is for tomorrow.  Very good though.

In digging.

I found my sous vide equipment.  Never did use it.  Thinking about it.  My only real problem?  I am not sure, at what temperature, plastic begins infusing the food.  Yes, it's... a concern.  Does it infuse food at any temperature?  Is it a time thing?  I just don't know.  But, yes, I do think about it.  With the dishwasher, I may go completely glass, for fridge containers and else.  Washing those things, to now, was simply too much.

Though, while pondering, and considering doing research regarding plastics, what is safer (honestly, if maybe they don't know or would simply lie), various notions about this and that, I found a video about how to optimize the use of the system.  And... an older video about why not.  Just... to add a few other opinions.

Hmm?

Oh, right.  Not much happening.  But... a shower shortly?  After a trim.  Then... some of the blankets down, and into the wash.  As well, dishes set to soak.  Getting closer to having most of them done.  Closer... so much closer.  A few more efforts and dishes will be pretty well cleaned up.

Laundry is mostly done, but... so much of it.  And unfolded, not hung, or else.  Ugh.  But, there are plans for that.  Clothing racks...  Yes, and covers for those.  But... I'll have to create space for those.  Always something more than just... doing.  More and more... and more.  Still... getting there?  Maybe.

It's struggling to warm in here.

The furnace is up a bit warmer.  The electric heating in here is a touch higher.  I have had a fatted coffee and a tea and chia seed breakfast to help warm me.  Am dressed warmly.  Am using the hand warmers, mostly keeping them in my pockets.  Hmm, though you know?  With my hands warm, and pockets a bit too toasty?  I just put them in my croc's.  With socks on...  Yes, laugh.  I'll take warm and socks over bare and frigid... if it only helps a bit.

Oh, and I almost always wear socks, anymore, for another reason.  When leaving my legs bare, the old wound started coming back.  Got scaly.  Couldn't seem to get that to heal.  Socks... stopped the deterioration, but couldn't fix the problem.  Which is why I used sandpaper on my leg, to remove the scaliness.  Right down to bleeding.

I've been trying to figure some things out, or again, more, better?  Or such.  I need to begin eating more often again, but more meat again.  Though, a few additives, such as salads thus dressings are also in the mix.

So, some things showed.  I grabbed one or two, went looking for a few others, and found a nice little collection.

I keep thinking about making ghee.

It's not really that difficult?  It does take time.  Some of the processes take fifteen or more minutes standing.  Or constantly checking.  Easier, really, if I can do it, to just stay on my feet while doing it.  I have been looking for other ways to do it.  And, while I think they may work, I'm not convinced they will quite get it right.

Ghee, rightly, needs to be browned a bit.  It isn't just clarified butter.  Which is good, and does remove the elements of butter that are... not as good.  With those gone, the butter is nearly shelf stable, is for a decent period of time.  But more important, to me, it is able to be used for higher heat applications in the kitchen.

Recoverd, mostly.

I really wondered, there for a bit.  Why did it take so long to recover?  I just don't understand.  I just know I no longer need heart medicine.  Or... for the moment.  That was really quite bad.  It felt like dying, and I would know.

I had hoped to get to a few things, but that won't happen.  Still too tired.  My pulse and such have improved.  Even so, I am still so very tired.  Oh, and the weather has cooled.  I think it was just 76 outdoors, when I looked, a bit after 13:00 or 14:00.  With no ac, or fans (even turned off the ceiling fan), it was 71, near me, when I woke shortly after noon, was it?

A few genuine carnivore foods?

Why, yes.  Yes indeed.  Followed by a few savory notions of another sort.

I always worry.  Are they going to use something that... I can't, won't, use?  So often they add something I can't eat.  Honey?  Sugar?  Or something I can't taste, like some "keto" sweeteners, such as stevia.  It's more like most recipes are dressed as something else.  Or, they make it a plug for multiculturalism.  I can't keep them all out, I miss things, but I try.

Foods, ideas, such.

This first one I found really interesting.  Now, for anyone carrying forty extra pounds, or more?  Simple keto might be a start, but it isn't fast enough or powerful enough.  It's a... proof of concept.  If you can make it on keto, soon or late you will realize your addiction to carbohydrates is too profound for you to beat.  Which... is why you have forty or more extra pounds.

This woman and her mother went on this journey for different reasons.  I would guess weight loss was just a benefit to the daughter, who understood what carbs have to do with cancer.  Who went on the journey with her mother, to be a part of her life in this different situation.  But... there is something in the diet, even to keto, for all of us.  And for some of us, the more the reason to go carnivore.

Nausea.

Nothing I have tried has improved the problem.  I am about to begin looking for ideas.  Milk, for as bad as it is for me, is edible and doesn't make it worse.  I have half a gallon left.  A fatted coffee isn't too bad, but... isn't as good as milk, on the belly.  I so want to eat.

Not sure if the chicken I thawed is still any good.  I am thinking of checking.  If so?

To bed later, up late.

Midnight, and change, or so.  Up at 8:30, give or take a handful.  Blood sugar still higher, at 144.  Difficult to keep on carnivore.  Again, looked at a few vids in an attempt to help with that.  Even eating right, again, for days.  Takes... a while to get back into trim, I guess.  Though I am not doing things just right.  If that may not ever be possible.  Bah.

I do have meats out, thawed, ready.  Not sure if the chicken is good.  It's older, from when I still bought chicken by parts.  Thighs.  But those had become so hit and miss, that I stopped buying them that way.  Every package was suspect.  I'll brine them, and bake them.  See how it works.  Toss them if they have that... scank old chicken taste.  As if they hadn't been frozen quickly enough.

Cream was obtained first.  Not a recording of the old group, whole, raw, bovine cream.  Cow, not bull.  *shakes head*  I got three.  Two for the week, consumption, one for recipes.  Then on to the store.  Greek yogurt, whole fat... butter, various berries, a lemon and orange, and... on.  For... some things I am planning to make.

Up a bit early?

Down right around 17:20?  Up at 1:45.  A shorter sleep, but good.  A good sleep though.  Only had to pee once, as well.  Very nice.  And, I may know why.  As I said, yesterday blood sugar got below two hundred for the first time in... a long, long while.  Keto sweetener, it works... and it doesn't.

As mentioned, on a typical American diet?  My blood sugar gets to 650 or higher... basically beyond the range of my glucometer to read.  But, on mostly keto, with the sweetener, it stays around 350, give or take twenty five points.  On carnivore, with the sweetener, it stays right around 215 to 230.

Finally got to breakfast.

Still cold out there.  Just at 30 F, when I went out to get the grill going.  Corned beef hash, first, ending with a few slices of cheddar.  Then four eggs.  A good breakfast, with tobasco and cholula sauce.  Those two didn't add any appreciable heat.  It's been a while since I have eaten carolina reaper, so I thought it would do something.  Nope.  Didn't even propose the blush of warmth.  Next time I'll just add my real hot stuff.

Why haven't I eaten recently?  Because, for the most part, I haven't eaten.  You can't really add something to nothing.  The little I have eaten, burger patties, don't really take to it.  Though?  I may try some, sometime soon.

Food.

Hungry already.  But I won't be eating for a bit.  I still need to wake, or wake more fully.  Coffee will help.  I just finally got to that, and am sipping my first dose of the day.  As well, I'd like to begin a few things, starting with a shower, shortly.

At a quarter to nine, it is at 68 outside.  Up ten degrees since the waking at 5:30.  Slow, but sure, the day is warming.  I'm sure we'll hit into the 80s today.  Unless a storm comes in.  Didn't look like that was going to happen, but... you just never know.

Yea?

I did get the two versions of my attempt to clear the clog done.  Neither worked.  So?  I'll probably need to empty the wet vac, then get it going to get the last of the liquid out of the tub.  I can get it drained down to the drain, and below it really.  Not sure how much liquid is further in, but I guess I'll find out later.

I contacted my friend.  He thinks he might be able to come over to help by this afternoon, around 13:00?  I guess I'll have to figure out how to stay awake.  I asked if he knew about the tool I needed, and possibly a replacement drain for the one that isn't working.  He thinks that might be possible, to pick those up on the way over.

I did wash up, and got things set aside.  Though, really, I would like to empty the wet vac, then get it back in and finish clearing to below the tub level.  THEN wash up again.  And, finally, get to another meal.  A few eggs, sausage, and some bacon.  Nothing fancy, but it... would be quite good.

Not much.

I am just not able to do much.  Today, yesterday, probably tomorrow.  As is, I am just hoping to make it to mass this Saturday.  That is the next thing I am hoping to do.

Tired?  Cold?  I did turn the heat up.  I am making food.  But it's not much.  I can't stand long, or do much when standing.  The nice thing about, say, baking a roast?  I can set it up... salt, pepper, and let it stand for an hour.  Then, turn the oven on, let it warm up.  Sit, maybe read, watch, or write.  Then, when the alarm goes off, go put it in, then check the temp every forty five to twenty minutes.

I did clean the freezertop off yesterday.  And I put some of the forzen meat in there into the smaller freezer, so that I have a better variety of meats more easily available.  I am hoping to hit some dishes this evening, or tomorrow.  No promises though.  I have caught back up on water, or had.  I'll need to get some work on that, maybe tonight.

But, not much is happening.  I just... can't get going.  But, while sitting, I am looking.  Recipes, ideas.

A bit of a start.

As mentioned, meat was put on order.  Further, if they have sirloin tip roast still on sale, I will order four to six of those.  Hmm, may call in, just to check, have it ready if so.  Medium to small.  Wonderful flavor, if, as mentioned, chewey if cut too thick.

I just hit the dishes.  Then set them to a rinse, as I think they are clean enough.  In an hour, or so, I'll get in and pull them.  Perhaps rinse them hot, again, before hand drying them and putting them out.  By the time I get back, at the lastest, maybe before I go, I will get the dishes put up and the freezertop cleared elsewise, so as to put some of the meats in the deep, drop in, freezer.

With this, the chuck roasts, chicken, and burger from last month, plus maybe the sirloin tip roasts, there is a chance I should be set up for several months.  Possibly five months.  I am eating far less these days.  The only thing to have to keep up on, a bit, is fresh veggies.  But, even those, I don't eat all that much.  It's just a matter of having it be fresh enough when I want to eat it.  That and salad.

The heart hurts, again, deeply.  So I am taking painpills.  As well, I am hitting waterpills.  I seem to be holding onto far too much water these last few days, week?  It goes with the heart pains, I think.  It's just not doing as it should.  We'll see if the painpills work, and the waterpills.  Hoping tomorrow morning will be easier.  Will take more, tomorrow, with some hope, if needed... wanted.  Getting to a full church mass will be... a bit claustrophobic.  I'm not used to crowds.  But, I am getting back to things, or for now.  So... will make all efforts to get there.

Yeah.  I need to get a shower, after dishes.  Then set up the next and nearing last loads, of dishes.  If I can cook outdoors more often, I can really cut down on pots and pans.  Flatware is what it is.  I have tried disposable, but that doesn't work well.  For some things, I may attempt to use chopsticks?  That could really help.  

Will have to process the food more, in prep.  But that will often be for making several meals.  So it will still be easier.  I don't know.  But maybe.  I am truly getting excited about the flattop.  It's not perfect.  It won't do everything (such as roasts, if the egg type grill might do those so even less indoor cooking?).  I just think cooking outdoors almost exclusively would work, at least until I can get a vent hood in the kitchen.  Though, even then... outdoor cooking would be better.

Oh.  I still haven't gotten to mopping the bathroom and bathroom hall.  And I will have to sweep again.  Which reminds me... while I do have mesh door mats, I am thinking of obtaining another sort, a finer mesh sort, so as to scrape bigger bits, then the smaller bits, off at the door.  Once I get my floors up to snuff, especially if I resurface them, some of them, then I want to keep them up.  I may even obtain "bath shoes" in many sizes, for guests.  If I get things cleaned to that level, I will have no difficulty requesting shoes be removed.  Either to wear socks, or the bath shoes... which will be lysol'ed when being put back up.

Hmm?  Well, just thinking out loud, ahead of things.  I have plans.  Not sure they will ever work.  But... so be it.  The plans are good.  Whether solid, and a real future, time only will tell.

Oh, and maybe later today?  I will set up some of the keto flour.  So as to make keto bread, fast or slow.  I have several recipes I'd like to make in slight bulk.  I no longer have xanthan gum, so may look for that at the store.  I looked on amazon, but the price has gone crazy.  If it's that at the store, I'll go without.  Just skip that particular recipe, or find xanthan gum keto alternatives.  Damn.

I have the rest of the ingredients.  From egg protein to oat fiber, maybe wheat fiber.  And, of course, the main types of keto flours, two main... almond and coconut.  And some alternatives even to those, perhaps.  It's just a matter of doing it.  And I have been busing working, cleaning, cooking, getting to town shopping and to mass, so things have... just not been good enough, open enough, clean enough, to get to flour.  But... I think I am getting there.  Tonight, or tomorrow afternoon, I will set up larger batches of the dry mix for various (probably) keto bread/roll/bun/etc flours.  Yes, yes indeed.

Sure, I'll put the recipes up for... some of what is on my mind.  And some alternative recipe types which just include breading of sorts.  Oh... I need to get pork rinds, while at it too.  That can make a decent breading, or even keto panko!  Which... I truly love.  Both of those, really, depending on the meal type.
