I have a horrible time trying to make omelets. Why? I don't know. I have tried to make them in cast, in stainless, and in high carbon pans. I have attempted to use the flattop griddle. Well, I think that is every way I have tried. Very unsuccessfully. I end up just... calling them scrambled eggs, and trying to removed them before they more than browned.
I... want omelets. Especially, with things in it. Onion, meats of various sorts, some veggies, mushrooms, and cheese. Sometimes a lot of things, sometimes just a few things. I really like omelets. Not much else I can do about it, I thought.
