Not the worst, by a longshot. I've been doing much, then I couldn't cool down then sleep until nearing midnight. I woke at about 8:30, with some help from my furry little... friends? If they want to be. They were restless, furtive, relentless natives this morning. Perhaps they aren't quite used to one canned food meal a day yet. All good. I opened the bedroom door at 7:30 and let them do their work. Some days they are less motivated, this not being among them.
A 'cup' of tea, another pot brewing. A review of plans for the day, with a pre-assault aerial view of forward ops, right to enemy lines as well as to their flanks and direct retreat paths... we will rout the enemy today. Hmm? Oh, I mean, I came, I viewed, I will conquer. Boxes and pancake batter don't stand a chance.
This is the recipe, roughly halved, I plan to use. Minus blueberries. Merely due to not having any. They would be a fantastic addition, as would anything fresh.
In a bit. I am not a fast starter this morning. It will be the first thing I do, and shortly. You know, I don't believe I have ever done pancakes before. Waffles, and I suspect the batters to be interchangeable, but the cooking is the difference. Hmm... low sugar strawberry jam and butter? Sounds good to me. Too much sugar? Look, the world decides in committee, based on compromise. You get what you get or I go with full on corn syrup.
Now you got me riled. I might as well go do! :p Later.

So-so. Better than what has been eaten in restaurants in a long time. Not bisquick, not dead white flower or fake dead wheat. Not even vinegar soured fake sourdough. The real thing, nearly cakes. It is the portions. I added far too much baking powder and soda, teaspoons eh? And my batter amounts were inconsistent. Nothing was undercooked if one was just slightly overdone.
Fussy? Heck no. I dove right if, if half was all I could eat, less, a third or likely a quarter. These were large, plate sized, and three of them. Although, no matter, they really need a syrup. Jam and butter won't cut it. May have to use real maple syrup, making the whole meal a rare treat. Hmm. Might try again tomorrow.
The recipe, halved then revised... 3 1/2 cups sourdough, 1 teaspoon baking powder and soda, 2 eggs (I used large, but medium to jumbo), and 1/2 teaspoon of vanilla. I was thinking milk or cream but no. Syrup will moisten or nothing will. I just fried them in my nonstick pan, if I should go to the real stainless or cast. Nonstick is as bad as junk food. Could make six pancakes. Might use half the batter tomorrow, saving half for the day after... to see how well that stores. Which could also mean making it ahead of time.
Not bad. I ate until honestly full, not overstuffed. Gooder(tm) food works that way. If even the low sugar topping is giving me a mild sugar rush. Even so, I simply couldn't overeat. Oh, you know? My mother sent applebutter home. I've been holding that in reserve. Perhaps some for pancakes, some for my first einkorn loaf. Nothing like homemade with homemade. Reserves indeed. Later.
