Oh? Yes.

I finally, whild unable to do much else, looked up some recipe ideas I have had in the back of my mind for some long time.  One thing at a time.

Now that I have found my molcajete, I want to get to salsas and guacamole, done the old way.  At least for a sample.  I read that tomatoes are on sale.  They are greenhouse or aqua... something... raised... aquaponic?  Something.  Anyway.  Plus, I have avocado.  Still, salsa first, I'll look on her site for guacamole recipes after.  Hmm, where is my cast iron pan?  Or else?  I'll... look.

Guacamole?  How I ate as a kid, often.

Next?  Something I thought would be more trouble.  Homemade pork sausage.  With the flattop already in production, I wish to hit pork sausage.  But, without sugar, crazy weird ingredients, extensive amounts of salt, or... whatever it is they dump into sausages these days.  And?  I honestly thought it would be difficult and messy.  But, really, it isn't.

Actually, this too is often how we ate.  Combine Mexican food and American farm food.  Not... usually... actually... combined.  Just... one day one, one day the other.  Whichever was more available, affordable.  It is far less expensive, and healthier, to take raw ingredients and make food from it.  It isn't even "health food", it is just healthier.  The cost is invisible, if one is humble.  It is time.  Only living in a financialized, money based, world of Babylon does this cost seem like a price.  In the real world, right world, Godfearing Godloving world, time is... almost of no consquence within the reason of living a life rightly.

So, yes.  I may call around, see about the prices, and willingness of butchers to follow a request as such.  Perhaps order, say, twenty or thirty pounds of the stuff, in two pound packages?  If I can find a place which will do that.  I have fennel seed.  I dont' have oranges.  I may get oranges for some of it, compare.  As for the spice mix?  I have that, but too, I would like to try some with just fennel herb (along with the seed), and some with just another singular spice (other than, again, adding the fennel seed).  Fennel seed, to my mind, is an absolute requirement for a proper sausage.

I do have most everything, save as noted, oranges.  Well, and the meat.  I'll make some calls, see if I can get a load of the stuff.  Might even get out to get it today, if they would do it.  Ugh.  Don't... want to go out.  But, this would push me to get dishes done, so as to shower.  Which... I will try to do anyway.  And, have the shower ready for a fast run tomorrow morning.

We'll see.  Hey, I love making good food.  I enjoy a nice meal, from time to time.  Ugh.  Later.

Not only will they cut the pork butt, it's what they do do.  So, yes.  Further, I asked if a bulk order would be provided at a discount.  A 25% discount was offered at the bulk I was ordering.  In two pound, freezer-wrap, bags of the stuff.  I... should do well, for a goodly amount of time.  I doubt if I will eat two pounds a month?  We'll see.  A nice nab for the going.  They will even have it ready yet today.  I let them know I wanted full fat, no trimming.  She... agreed whole heartedly.  Must be a gooder woman.

I'll grab a few oranges, perhaps a few whole nutmegs if available, to try as an additive in various samples of what else I have.  Is there, however, a single recipe that works for all things?  I don't think so.  So, perhaps, two packages out, spiced in three different ways.  While I probably can't find a singular recipe, I can probably get things more to my liking, including some things mostly or usually, excluding some things perhaps totally save in an emergency with no other good options.
