Awake and feeling it.

I suppose if I want to recover I did too much yesterday.  Wonderful!  No, I mean it, mostly.  I woke several times in the night, then upon waking this morning, all with one similarity.  It hurt.  What hurt?  Hmm... imagine you are a dimwit, you have a broken finger, and you use it to point out parts of your body.  Yes, everything hurts.  It has smoothed out a bit.  As well, I am going to take some pain pills.  It's just aspirin, even so I don't dose often.  Certainly not every time it hurts, not even when it all hurts.  Once in a while, though, a dose will do.  Today is that day.

Today?  I have already been working on another list.  In making stock, to this point, I haven't used mirepoix.  Or other aromatic combinations.  Carbs was my main complaint.  I have been thinking about things.  First, I need more carbs than 20.  I just do.  I have heard 80 to 100 as a more reasoned approach.  That might even be a bit tight, but it is a more reasoned, reasonable, target.  I will kick the tires and see.  Salads, beans (from dry), whole rice, and sour dough... especially if I grind my own wheat, or sprouted wheat.  I do need more carbs, just a lid on them and the right ones.  As well, I kept thinking... since the veggies are removed, just how many carbs are left in the stock?  To be honest I have no clue.  I am sure a bit of research would make it as clear as mud, at least initially.  The thing is, both the need for, and the probably slight addition, means that mirepoix should be just fine, so I've added those for my next stock fixings.  In time, my goal is to have a gallon or two of at least two types of broth always on hand... for soups, for sipping, for casseroles.

The rest is for food or cooking related, mostly.  I suppose fluorescent tubes in the kitchen is cooking related, to a degree.  This time I will get many of them.  I'm not sure which to get though... full spectrum, or yellow, or...  I will go with two sets of each, I suppose.  Though I may research what others prefer.  In winter it might help to have full spectrum?  Some say yea, some say nay.  The lamp never helped, but it was good lighting for reading.  I also keep missing light olive oil.  But that is actually somewhat difficult to find!  It is what I prefer in my bases, such as mayo or aoli.  Extra virgin has it's place, but it's really not in those things.  A few other things for making homemade dressings and a grill top.  Grill top?

Yep.  As I move more to steak I have been reviewing methods of cooking steak.  Actually, there are two different videos which I intend to use together.  One would do, but they go about it using a sous-vide system.  I neither have, nor will purchase, such a system.  It has it's uses, but is really more useful for commercial settings.  While it seems expensive, having just bought a stove I don't see much difference.  It is just another system.  Though, if I were to buy another major cooking system, it would either be a wood burning stove or a gas range and oven.  Or... first.  If I was truly wealth, before I gave it all up, I would try these various things.  I just... I want to know.  I am curious.  Why I want a grill face will become apparent in the first video.
The first video has a number of experiments.  I jumped to the one that they think worked the best (once the steak is to a certain doneness - they use sous-vide, I'll be using another method in the next video.

Now, I won't be following the full instructions of this next video, obviously.  As I will be searing on the charcoal chimney.  Garlic, sometimes, I am not sure butter will be needed, though I may experiment with that.  A little oil on the grill, however, is always a good plan.  Yeah.  Just bake it to the right temp (even that will be a bit experimental), then sear it.  It's a use of a lot of resources and fuss, and, yet, if it works, allowing me to heal, lose weight, carry back into intermittent fasting, and getting things going, well worth it.

I think my goal will be, once the cave is truly finished being arranged and cleaned, to get back to daily fasting, through the week with a full three day fast on the weekend.  If work has to be done, I may have to skip fasting for a bit, if even then I would like to make sure how I am breaking the cycle isn't destructive to my ends.  I think I can.

Of course, first I have to finish with the appliances.  Then I have to finish cleaning.  But even before those I really need a bit of a break.  But I can't have a break until... *sigh*  I have to do returns, so I might as well set up my foods and such while at it today.  I am getting places, moving things, getting things done.  It hurts, it's going to hurt.  And, yet, that is all good.  I knew I wouldn't get better without a lot of pain.  Even so, it's probably not enough.  If it brings about some improvement, however, that is a start.

Oh, my brother called.  I think they liked the gift.  He wanted to know what I wanted.  Well, rather than have him buy something I didn't, I told him.  Steaks, from my local butcher.  I would get him a phone number to call, and arrange payment to the amount he feels comfortable, and... that would be that.  He says they don't have steaks available in Texas, or the part of it he lives, at this time of year.  Texas doesn't have steaks?  Really?  Okay.  Anyway, we do, I assured him.  Hey, if they ask, tell them.  It's better than getting, even if pricey, a gift that is not wanted.

Well... good morning and good day.  I'll get a shower in a bit.  Might brew an half cup of coffee for a change first, with cream... well, and finish waking.  I won't be jumping at the bait until mid to late morning.  Good, indeed, day.  Now... get off my porch!
