Things took longer than anticipated.

It is already twenty to eight.  I am crashing.  was crashing earlier.  But... had... things to do.  A shower, shave, and teeth brushing were done.  Trash and litter earlier.  Oh, and the meat was bagged and put up.  I didn't have what it took to pull the pork.  I will, eventually.  Probably.  Or just chunk off pieces and warm those.  Who knows.

I have been reviewing kombucha.  Comparing it with water kefir.  Both make a fizzy drink.  I have made water kefir before, and like it.  But, it can be a bit of work.  More bottling for a second fermentation.  The same drawback exists for kombucha.  Still, while I truly enjoy milk kefir, I would like to have variety.

I am seriously thinking about adding both to my diet.  They are enough different, yet enough similar, to what I am already doing, in order to consider them.  Variants.  Plus, keeping up on as much milk kefir as I am doing is getting a bit difficult.  Adding a few other things in, and cutting milk kefir a bit, would... could... help out?

To that end, I am considering what it would take.  I have three or four half gallon jars available.  Perhaps, too, a couple of gallon jars.  Though it really looks like two to three gallon jars would be better, at least for the kombucha.  I have been looking over sources.  Amazon is a good place to source, not necessarily a good place to buy.  Every third to fifth product is extremely overpriced.  But... it is a good place to look for products, types, names, brands, and go from there.  Sometimes they offer good, even superior prices.  Just... be careful.

As well, there are alternatives to buying a scoby, or some such.  Including buying raw product, and adding that to the sweetened tea.  I suspect I have suspended water kefir grains around, somewhere.  With my water going through r.o., I merely need to collect enough... if I do keep two half gallon jars at the ready for cooking and drinking.  Well, and I'll need sugar.  No organic crap.  Just... real sugar.  Simple.  It works best, though a bit of molasses adds minerals, and isn't bad, at least for kefir water.

The last time I tried the local organic store, they required masks.  I found their number.  Unfortunately, they aren't open an hour or two.  I can't stay awake that long.  I'll call them when I can.  It is time to go on to bed.  I think the downstairs is shut up, but I'll do a quick check.  Then close things down upstairs as I go on to bed.  Good morning, day, and... night.
