I suppose it is that time of the year. Still, unusual in some respects. Not unwelcome, just strange. I have worked at not talking her ear off when she calls. And, yet, that is an aspect of Doom, or this one. I could race-talk your mind numb, then not see you for a year or ten, then do it all over again. I say what I have to say, then blather, go away, nap, or you run. Auditory pepper spray. I like me! Ah, but the thing is, there is something I wished to query of the Dread Dark Mother (ddm, when in such a mood, henceforth). Or, really, when wanting to see if the goat in the old girl can still be had for a song? Maybe. Anyway, I wanted to see how she would season a beef chuck in a pressure cooker. Less salt is needed, but what else she would use... she is my go-to gal, as a general rule, when I have just a question. There is the internet. But the internet had cooked fewer meals per than she has cooked in some years. She has cooked socially, for funerals to weddings; she cooked at home for few and many children; she has cooked professional, at public and private institutions and businesses... including some she ran. She is frugal but not unsafe. And she knows how to turn almost nothing into a banquet, or the exquisite into the sublime. So... yeah. Garlic, salt, pepper... was there something else? Maybe. But that will be enough for now. And, cut that when using the pressure cooker, as it infuses meat with ferocity.
So... that is what I will do. I actually think I am about to hit the dishes, then set up the bones to roast. When they are browned, to my liking, I will shut that off, then do the beef, reserving the meat but putting all of the juices in with the bones and water. Two days of stewing should see me to a fine brown, hopefully meaty, beef bone broth in a couple of days. And... now that I am sure it will gel, I won't more than cool it enough so that it doesn't interact with the plastic containers. Then a quick, I hope, pour, and into the freezer. I ordered about 80 containers of each. That SHOULD handle several types of broth to be on hand at a time. And with reuse, last a goodly while. If one is forgotten back in the jungle of my fridge, becoming a n usp (unintended science project), I will merely... send it to it's reward, cap on. Still, if it takes half the containers, I may order another set of each for in storage. I don't believe in being right on that edge. After beef? Another chicken bone broth. I don't... really think pork broth is my favorite. Lamb might be okay, but I'll have to experiment with that. Chicken and beef for now.
After dishes, at least one pass, and getting the bones roasting, I'd like to take a shower, then take my first shot at hand washing items... the compression socks. It seems so... weird. And, yet, I know men and women who have done that for much of their life. New, to a body, is weird. But it isn't at all terrible... just... well... new... and new is a bit intimidating in various odd ways. But it is a wonderfully humble act of self care, and care for what one has paid good money... and for what tends one's issues. It's a trick that's not a trick.
