The last time I made bone broth I froze it in ice cube trays. That actually took a while, even with six trays... eight? Not again. I ordered 8 oz. and 16 oz containers. I want to see which will do the best, for my general needs. Though, really, both might end up being put into full use. The smaller ones would be good for adding to stew, the larger ones to have stock out ready to cup, warm, then serve... daily. I need those minerals, vitamins, and electrolytes badly... more so on the water bill, even with the potassium supplement. Yeah, ice cube sized bits are just too small, and thawing out daily is a nuisance.
Even so, some time this week I will begin the stock. Tomorrow maybe. This time I will use less water up front, those bones, and a seasoned and seared chuck roast... which I will remove when it is done. I have found that, if you don't season the meat, it is pretty much useless even if still tender enough. You can't add enough salt after the fact. I knew that, I just... didn't want to know that when putting that first batch together. How will I compensate? Much more stock than cooking water, to start. And also not needing to add as much, or any, salt when heating it for a cup.
Look. Life is theory until it is proven... or the things that go on in life. Once proven, it even so behooves one to seek better methods, better solutions, easier processes, and the rest. Sure, you could learn how to boil and egg and stop there. But then you would never know the joy of an omelet, or the wonder of egg noodles, or learn about mayonnaise, or a thousand other things. Simple? Sure. But a waste if it stops there. Hurt to learn? It can. Can be expensive too. Ignorance, I will wager, is much more expensive. Where to start and stop? Stop when you die. Start when you realize there is more out there which might be tasty, interesting, and such... as long as you avoid shadows. You know what is wrong, don't even try to kid me. Don't think I don't know that you are kidding yourself... or did at some point. And, yeah, you still remember. *wink*
Birthday dinner arrived. Ziti. A request before I went on the new diet. Pasta and... stuff. Not sure what it is about that, but it's... good. I mean good in that ghostly weird way that cannot be identified. It's my first truly non-keto meal since I started, and I'll only crack 50 once. It was good this time as well. When I finish that dish off, and the meatzza, I will begin daily fasting. If that goes well for a week, I may begin the 1-day, 2-day thing. If that goes well two weeks from it's initiation, I will go to 1-day 3-day fasting sequences. In another two weeks, if potassium is holding and all else is doing well? Then I go 2-day 3-day fasting. For as long as it takes to manage insulin. Then I begin backing off. Still, it would be good to fast several times a week. Just daily, perhaps. Whatever it takes to keep blood sugar in compliance, and as level as possible. I think I can do this. Doc doesn't want me to try, no medicine sales in it. Look, nothing personal, but he is a businessman. Working with a bunch of women who he thinks hate me. Oh, yeah, I see that easily.
I will only tell them, and him, the same thing I was told. No.
